Pumpkin Cheesecake Protein Pudding

Going basic this fall…Pumpkin everything! This is such a quick and easy treat with a good amount of protein and antioxidants. It’s a rich comfort food you can feel good about.
1/2 c pumpkin purée
1/2 c cottage cheese
2 tbsp maple syrup
1 tsp cinnamon
*optional: 1/2 tsp pumpkin spice
Blend in a blender until smooth and creamy. Serve chilled. That’s it! (Would be great topped with crumbled graham crackers too.)

(I used Daisy brand 2% fat cottage cheese and Libby's pumpkin puree to get these macros. Some other pumpkin brands have more protein but I feel Libby's has great flavor, so you choose!)
Added health benefits: Pumpkin has been documented as a good source of antioxidants and has anti-inflammatory, anti-carcinogen, and anti-diabetic properties.
