Gluten-Free Churro Cheesecake Protein Pancakes/Crepes

The fun thing about this recipe is how many different ways you can make it; you can keep it basic or you can dress it up as much as you want. They are also great for meal prep; they are good cold out of the fridge for a quick snack to-go, or you can freeze them and pop them in the toaster.
Here are two different versions for you to try. The original recipe produces more of a crepe-like texture, while the addition of the protein powder in the second recipe makes them puff up a little more like normal pancakes.

GF Crepes
1 banana, mashed smooth
2 eggs
½ tsp cinnamon
Whisk everything together and cook like you would normal pancakes on a griddle or pan with coconut oil. Flip when mixture starts to bubble on top. You can top with nut butters, maple syrup, honey, blueberries, etc. **If doubling, only add 1 more egg.

GF Protein Pancakes
1 banana, mashed smooth
2 eggs
1 serving Vanilla or Chocolate protein powder
½ tsp baking powder
*Optional: Add 1 Tbsp Whole Trilogy Health Seeds (flax, chia, hemp) for some crunch and added nutrition and fiber
Whisk the baking powder in with the protein powder and mix egg with banana. Mix everything together and cook like normal pancakes on a griddle or pan with coconut oil. **If doubling, double as outlined.
“Cheesecake” Spread
1 oz goat cheese
½ tsp cinnamon
1 ½ tsp honey or maple syrup (I prefer maple for this one)
1 tsp goat milk (can substitute water)
Cream goat cheese with cinnamon and maple or honey. Stir in goat milk to thin it out and make it spreadable.
